As Autumn approaches I was inspired to create a breakfast bar with sweet potato pie in mind! This paleo/vegan friendly recipe definitely fits the bill. It has a softer texture than a granola bar, and less sweet than a pie, but I couldn’t stop eating these! I’m so glad they’re still full of amazing nutrition!
Packed with heart healthy nuts, coconut, coconut oil, chia seeds (high in omega 3’s) and anti-oxidant spices, apples and high iron sweet potatoes! Your taste buds will thank you! These would also be great for a party or lunchbox!
P.S. We drizzled these with my Sugar Free Chocolate Sauce recipe here, but they are also great without the chocolate.
