Here’s a recipe coming straight to you from my 14 year old. She recently developed a serious love affair with sautéed spinach. This is her very own creation and it is unbelievably good. I’m just having a really hard time keeping enough spinach in the freezer, since she makes this for lunch almost everyday!!! Can’t complain about that. Spinach and kids don’t usually go together, but mine love it. We also seem to have great results in getting our kids to try something if we use reverse psychology and tell them not to eat it! When they’re under 8 years old, they usually fall for it! 🙂 Give it a try and comment, comment, comment!
P.S. Did you know that that glycoglycerolipids from spinach can help protect the lining of the digestive tract from damage — especially damage related to unwanted inflammation? Not to mention the unbelievable vitamin and mineral content that makes spinach one of the top super foods for antioxidants, anti-inflammatory and anti-cancer properties. It also keeps bones strong. Chew on that!
