Here’s a recipe by request of my oldest daughter, who loves rice! I hope you like it as much as she does! 🙂

Gluten Free Cinnamon Spice Rice Pudding

Ingredients
- 1 cup rice
- 2 cups water
- 3/4 cup dairy free milk of choice, unsweetened
- 1 Tablespoon Maple Syrup
- 1/4 teaspoon sea salt
- 1 teaspoon ground cinnamon
- 3 dashes ground nutmeg
- 1/4 teaspoon stevia powder
- 1/2 teaspoon vanilla
- optional toppings include apple chunks or applesauce, walnuts or pecans, raisins, dates pieces
Instructions
- 1. In a large saucepan, prepare rice according to package instructions.
- 2. Remove 1 1/2 cups cooked rice from pot and blend in a blender with the milk. Return to pan and heat with the remaining ingredients for 10 minutes more.
- 3. Enjoy warm or cold. Travels well, too! :)
