I know what you’re thinking…Kale for breakfast? Well, yes! Take if from someone who has had a long road with chronic fatigue and stomach issues. Once you begin changing the way you feel one meal at a time, dishes like this one become a delight to your taste-buds and your health. This salad is an overnight success, so you don’t have to do all the work in the morning; when you’re getting your motor running. I promise you will be very pleasantly surprised at how this dish is quite enjoyable, even in the morning. I mean, think about it…if you can eat a big slab of dead animal first thing, then why not a gorgeous, light, and tasty salad? You better believe it. This one won’t disappoint!
