Eating without eggs is extremely challenging, to say the least! I have just adapted a mayo recipe from one of my favorite bloggers, Wellness Mama. After I made this mayo and put it into tuna, my husband and I were smitten. Give this a try and let me know what you think.
A word about tuna. Most canned tuna contains soy, so shop with caution if you’re sensitive to soy. Since we have a Trader Joe’s I buy mine there. They have several different types to choose from and they are all soy free, and a great price. If you don’t have a Trader Joe’s in your area I recommend Crown Prince from Whole Foods or Vitacost.com. I also recommend Wild Planet, also available from Vitacost.com for a super price.

Egg Free Tuna Tomato Blossom

Ingredients
- 1 t. fresh lemon juice
- 1 ripe avocado
- 2 T. avocado oil or grape seed oil
- 1/2 t. salt
- 1/4 t. garlic powder
- 1 T. Annie's honey dijon mustard
- 2 - 4 cups salad greens
- 6 sliced baby carrots
- 1/2 sliced cucumber
- 1 stalk sliced celery
- 8 cherry tomatoes
- pepper to taste
- 1 5oz. can tuna
- 2 large beefsteak tomatoes
Instructions
- 1. For the "Mayo," In an electric hand chopper add the lemon juice, avocado, oil, mustard, garlic powder, salt and lemon juice. Blend until smooth.
- 2. Drain the tuna and add "Mayo," half the sliced celery, and pepper.
- 3. Slice a large beefsteak tomato like a pie, but don't slice all the way through so that it stays together. Place a scoop of the tuna onto the center of the tomato blossom and garnish with dill weed and Raspberry Avocado Dressing.
