Carrots have been a favorite at our house for years. Our first born ate so many carrots that I had to put her on carrot probation so she wouldn’t turn orange! Here’s a super easy way to enjoy carrots as a side dish with any meal. Just don’t eat too many or your friends may ask why you look orange!

Ingredients
- 1 bag Organic baby carrots
- 1 T. melted coconut oil or grape seed oil
- 1/2 t. salt
- 1/2 t. ground black pepper
Instructions
- 1. Preheat oven to 400.
- 2. In an 8" x 8" baking pan place one bag of organic baby carrots.
- 3. Drizzle with 1 T. melted coconut or grape seed oil. Both of these oils are good for high heat cooking. Add salt and pepper, and bake for 40 minutes.
